Downtown Hudson has become one of the region’s most vibrant destinations, thanks in no small part to the creativity, passion, and entrepreneurial spirit of local businesses like Rail Trail Flatbread Company and New City Microcreamery.

Rail Trail Flatbread Co.

Who They Are

Rail Trail Flatbread Co. opened in 2012 with a vision: to serve inventive wood-fired flatbreads and craft beer in a warm, community-centered space. That vision caught fire—literally and figuratively—and the team quickly expanded their culinary universe.

New City MicrocreameryIn 2015, they opened New City Microcreamery, an ice cream shop across the street from Rail Trail that uses liquid nitrogen to create small-batch, ultra-smooth treats. Then came Less Than Greater Than in 2017, a hidden speakeasy tucked beside the creamery, known for its elevated cocktails and mysterious, intimate vibe. Their growth didn’t stop in Hudson.

In 2018, New City opened a location in Cambridge, followed by a Sudbury outpost in 2022. In December 2023, they started another chapter by opening the second Rail Trail in Milford, continuing their mission to bring incredible food and drink to new communities.
